Here is another keto recipe success story. When you are on a ketogenic or gluten free diet, parathas are something you really miss. These cottage cheese or paneer parathas are made with coconut flour.
Psyllium husk can be a strange ingredient for many people. Its easily available on Amazon. The hesitation over buying it is a hurdle you need to overcome. It’s a great addition to your pantry, especially for gluten free baking.
Psyllium is a probiotic that helps the healthy gut bacteria to flourish. It is also a soluble fiber that helps relieve constipation. In addition, it helps regulate high cholesterol, triglycerides and blood sugar levels.
Paneer Stuffed Keto Parathas
Ingredients:
For Paneer stuffing:
- Paneer/ cottage cheese cube – 100 gms
- Minced onion – 2 tbsp
- cumin powder – 1/2 tsp
- Salt – to taste
- Minced coriander leaves – 1 tbsp
- Chaat masala [optional]- 1/4 tsp
Method:
Mash up the paneer in a bowl and mix in all the other ingredients.
Make a small ball with the dough. Flatten into a small round. Put a spoonful of paneer filling inside it and close up into a ball formation, like a stuffed dumpling.
Put this on a parchment paper and cover with another piece of parchment paper. Use your hands to press out into a round shape about 5 inches in diameter.
Don’t worry if some of the paneer mix gets exposed, it will set well when it’s cooked on the tawa.
Now heat a tablespoon of ghee on a hot tawa and put your paneer paratha on it. Cook on low fire for two minutes till that side is golden brown. Now flip on to the other side and cook till done.
Enjoy with some fresh curd and spicy pickle.
